Porch update






Baking Cheat Sheets

  I just made these cheat sheets for the inside of my baking cabinet.

CAKES
Pan size Cooking time Always
13x9 30-35 min Preheat oven
2-9inch round 30-35 min Grease and flour pans
15x10 25-30 min Cream butter and sugar together
Bundt 45-55 min Add dry then wet
Cupcakes 18-23 min Temp 350 unless stated otherwise in recipe
8-inch square 25-30 min For chocolate cake you can substitue coffee for water
Buttermilk: 1 teas. Lemon juice or white vinegar to 1 cup milk. Mix. Let stand 5 min
Basic Yellow cake  Chocolate cake
1 cup butter  (2 sticks softened) 2 cups sugar
1 1/2 cup sugar 1 3/4 cups flour
1/2 teas. salt 3/4 cups cocoa
1 Tablespoon Baking powder 1 1/2 teas. Baking powder
3 cups  flour 1 1/2 teas.  baking soda
3 lg. eggs room temp 2 eggs
2 teas. Vanilla 1 cup buttermilkmilk
1 1/4 cup milk 1/2 cup vegetable oil
2 teas. Vanilla
Chocolate Mayo cake 1 cup boiling water
2 cups flour
1/2 cup cocoa Brownies
2 teas. Baking soda 4 squares unsweetened chocolate
1/4 teas. salt 3/4 cups (1 1/2 sticks) butter
1 cup sugar 2 cups sugar
1 cup mayo 3 eggs
1 cup water 1 teas. Vanilla
1 teas. Vanilla 1 cup flour
1 cup chopped nuts (optional)
Microwave chocolate and butter in large bowl until butter is melted. Stir until chocolate is completely melted. Stir sugar into chocolate. Mix in eggs and vanilla until blended. Line 13x9 inch pan with greased 
aluminum foil. Bake at 350. 325 for glass pan. Test with toothpick











Cornbread Preheat oven to 425
1 cup yellow corn meal
1 cup flour
2-4 Tablesp. Sugar
4 teas. Baking soda
1/2 teas. Salt
1 cup milk
1 egg
1/4 cup veg. oil or bacon grease
Pour oil in 8 inch pan (I use a 10 inch cast iron skillet) and put in oven In large bowl combine dry ingredients Add egg to milk and mix. Pour milk into dry ingredients.Carefully pour oil into mixture. Pour mixture into pan and bake for 20 min.












Biscuits Preheat oven to 450
2 cups flour (from freezer)
2 teas. Sugar
2 teas. Baking powder
1 teas. Salt
1/2 teas. Baking soda
1/3 cup shortening or butter (from freezer)
2/3 cup buttermilk
In a large bowl, combine the flour, baking powder, baking soda and salt. Add the cold shortening. With a pastry blender or a fork work fast to blend the shortening i into the flour until it looks like meal. Add most of  the buttermilk and stir until the dough starts to come together. If the dough seems too dry, add more buttermilk (a tablespoon at a time) until the dough is moist but not overly sticky.Transfer dough to a floured surface and pat it down until it’s approximately 1 1/2 inches high. Fold the dough in half. Gently pat it down and fold over again. Repeat five more times. (This process gives you those buttery layers.) Gently pat the dough into a circle and cut your biscuits with a biscuit cutter or other round mold. Push any remaining dough scraps together, pat them down, fold them over 2-3 times and cut into biscuits.
Transfer the biscuits to a baking pan, (I use a cast iron skillet) positioning them side by side so they are touching. Bake for 10-15 minutes or until golden on top. 






Pie Crust
Use flour and butter from freezer.  
9 inch one crust 9 inch two crust
1 1/4 cups flour 2 cups flour
1/4 teas. Salt 1/4 teas. Salt
1/2 cup butter diced and chilled 2/3 cup butter
2 Tablespoons to 1/4 cup ice water.  4-7 Tablespoons ice water 
Mix flour and salt.  Cut in butter until it looks like coarse crumbs. Stir in water one tablespoon at
a time until mixture forms a ball.  Roll out dough on floured cloth to fit 9 inch pan. 
For baked shell prick bottom and sides and bake at 475 for 8-10 minutes

Pancakes
1 cup flour
2 Tablesp. Sugar
2 teas. Baking soda
1/2 teas. Salt
1 cup milk
2 Tablesp. Veg. oil
1 large egg
1 teas. Veg oil for skillet
Moisten paper towel with oil for skillet. Coat skillet with oil. Heat skillet on stove. 

Mix dry ingredients. Mix Wet ingredients and add to dry. Whisk with fork or whisk. Batter should be 
slightly lumpy. Spoon batter into skillet. Cook until pancakes have bubbles and a few have burst. 
Flip, cook another 1-2 minutes.  Place in warm oven till ready to serve.
