I made steak and rice for J and the boys tonight. It was one of Len's favorites. Ashton loved it. I was in the living room with Leia and they were eating dinner. Ashton yelled, Oh my god, nana, this is delicious! Made me feel good. I was planning on coming home to wine and tater tots and the tater tots were questionable. Its been a sucky week and a half for me relationshipwise and I've been looking forward to wallowing. Anyway, I got home and had 2 sips of wine and thought, "That smelled really good while I was cooking", so I headed to the grocery store for the ingredients and came home and did a load of laundry, put Pandora on and cooked myself dinner. It was really good. And easy, Here's the recipe:
Steak and Rice
1 1/2 - 2 lbs Sirloin steak (Maybe you could use round. I don't like that cut and never use it)
8-16 oz of fresh mushrooms
1 box Uncle Bens Long Grain and Wild Rice (I've used mushroom flavor and original)
1 box beef broth
Olive oil ( 2-3 T)
1/2 - 1 med. yellow onion (or whatever color you have)
3 T flour
Salt to taste
Garlic powder to taste.
Start the rice. Use beef broth instead of water. Cook according to directions on box. Cut the steak into thin strips (like for stir-fry). Slice the onion, cut the slices in half. Put the steak, onion, mushrooms, salt, garlic powder and olive oil into a frying pan and fry on med. until onions are translucent, meat is no longer pink and whatever liquid there was is just about gone. Add the flour, stir until the flour is absorbed. Add whatever is left of the beef broth. Start with a little bit at a time and stir, add more, stir, add the rest, stir. Depending on how much beef broth was in your box, you may need to add water. Stir till its gravy. Taste. Figure out if you need to add salt. This should be done the same time as the rice. Fresh baked bread or biscuits go well with this. You can use refrigerated or frozen, I said fresh baked, not homemade. Spinach or romaine salad and a vegetable.
